Pasta salad with aubergines and Sun dried tomatoes – Video recipe

 

Ingredients (for 4 people):

  • 400 g of rigatoni,
  • 300 g of long aubergines,
  • 40 g of sun dried tomatoes – 100% ORGANIC by Agriblea,
  • 2 fresh spring onions,
  • 20 g of grated salted ricotta cheese,
  • 60 g of pine nuts,
  • 20 basil leaves,
  • 1 fresh red pepper,
  • 4 tablespoons of extra virgin olive oil,
  • 1 clove of garlic
  • q.s. of salt,
  • q.s. of extra virgin olive oil.

Directions:

  1. First cut the aubergines into 3 mm thick washers.
  2.  So you have to find the dried tomatoes by soaking them in hot water for 5 minutes, when they are softened cut them into strips.
  3.  Put in a pan the oil, the crushed garlic, the chilli without the seeds and chopped, the chopped spring onion and fry for a few seconds.
  4.  Now add the aubergines and season with salt.
  5.  Cook the aubergines, adding a ladle of hot water and then the sun dried tomatoes.
  6.  Boil the rigatoni in abundant salted water.
  7.  When the aubergines have softened, you can add the coarsely chopped basil leaves.
    Toast the pine nuts in a non-stick pan.
  8.  Drain the rigatoni by conserving a little ‘cooking water and add it to the seasoning.
  9.  Lastly incorporated the toasted pine nuts and grated salted ricotta.
    Enjoy your meal.
